Ingredients

  • 5 slices whole grain bread
  • 3 units ripe avocados
  • 1 cup cherry tomatoes
  • 1/2 unit red onion
  • 1 unit lime

Instructions

Preheat your oven to 350°F (175°C). Arrange the slices of whole grain bread on a baking sheet and toast in the oven for about 5-7 minutes, or until they become slightly crispy.

While the bread is toasting, cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados using a fork until smooth. Add salt and pepper to taste, and squeeze half of the lime into the mashed avocado to prevent browning.

Dice the cherry tomatoes and finely chop the red onion. Combine them in a bowl. Squeeze the remaining half of the lime over the mixture. Add salt and pepper to taste, and stir well to make the tomato salsa.

Once the bread is toasted, remove it from the oven and let it cool slightly. Spread an even layer of mashed avocado on each slice of bread.

Top each slice of avocado toast with a generous spoonful of tomato salsa. Garnish with fresh cilantro leaves.
