Ingredients

  • 300 g Lean beef strips
  • 200 g Soba noodles
  • 1 medium Bell peppers
  • 150 g Broccoli
  • 100 g Snap peas
  • 4 tbsp Soy sauce
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 2 tbsp Sesame oil
  • 1 tbsp Vegetable oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

Cook the soba noodles according to package instructions. Drain and set aside.

Slice the bell pepper into thin strips and chop the broccoli into small florets. Mince the garlic and ginger.

Heat 1 tbsp of vegetable oil in a large frying pan or wok over medium-high heat. Add the beef strips, season with salt and pepper, and stir-fry until browned, about 3-4 minutes. Remove the beef and set aside.

In the same pan, add the sesame oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Add the bell peppers, broccoli, and snap peas to the pan. Stir-fry the vegetables for about 5 minutes, or until they are just tender but still crisp.

Return the beef to the pan. Add the cooked soba noodles and soy sauce. Toss everything together and continue to stir-fry for another 2-3 minutes until heated through.

Taste and adjust seasoning if needed. Serve immediately.
