Bring a pot of water to boil and cook the soba noodles according to package instructions (usually around 6-8 minutes). Drain and set aside.
Thinly slice the bell pepper and cut the broccoli into small florets. Mince the garlic and ginger.
Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil.
Once the oil is hot, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
Add the lean beef strips to the pan. Stir-fry for about 3-4 minutes or until the beef is brown and cooked through. Remove and set aside.
In the same pan, add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Return the cooked beef to the pan with the vegetables. Pour in the soy sauce and sesame oil. Stir well to combine all ingredients.
Add the cooked soba noodles to the pan and toss everything together. Cook for an additional 2 minutes, ensuring the noodles are well coated with the sauce. Season with salt and ground black pepper to taste.
Serve the stir-fry hot, garnished with sesame seeds if desired.
