Bring a medium saucepan filled with water to a gentle simmer over medium heat. Add 1 tablespoon of vinegar to the water, which helps the egg whites set quickly when poaching.
While the water is heating, toast the whole grain bread slices until golden brown and crispy. This should take about 3-5 minutes depending on your toaster.
In a bowl, mash the 2 avocados with a fork. Add salt and pepper to taste, mixing well. Set aside.
Once the water is simmering, crack one egg into a small bowl. Create a gentle whirlpool in the water with a spoon and carefully slide the egg into the center of the whirlpool. Repeat with the remaining eggs, poaching them in batches if necessary. Poach the eggs for about 3-4 minutes for a runny yolk, or longer if you prefer firmer yolks.
Once the eggs are poached, use a slotted spoon to remove them from the water and place them on a paper towel to drain excess water.
Spread the mashed avocado evenly onto the toasted slices of whole grain bread.
Top each slice of avocado toast with a poached egg. Season with additional salt and pepper to taste, if desired.
