Toast the whole-grain bread slices until golden brown. Set aside.
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add the lemon juice, salt, and pepper. Mash together with a fork until well combined but still slightly chunky.
Bring a pot of water to a gentle simmer over medium heat. Add a tablespoon of vinegar to the water. Create a gentle whirlpool in the pot with a spoon.
Crack the eggs into the simmering water carefully, one at a time. Cook for about 3-4 minutes for a soft poach or longer for a firmer yolk.
While the eggs are poaching, spread the mashed avocado evenly over the toasted bread slices.
Use a slotted spoon to carefully remove the poached eggs from the water. Place one poached egg on top of each avocado-topped toast.
Top each toast with a handful of microgreens and a sprinkle of chili flakes, if using. Drizzle olive oil over the top for added flavor.
Season with additional salt and pepper to taste, and serve immediately.
