Each bite balances crisp textures, bright citrus notes, and rich egg yolk for a restaurant-quality brunch that’s fresh, elegant, and surprisingly simple.
Prep mise en place (5 minutes): Thinly slice the radishes and place in a small bowl of cold water to keep them crisp until assembly. Finely chop the chives and zest the lemon (you'll need 1 tsp zest total). Halve, pit and scoop the avocado into a bowl and set aside. Soft-poaching eggs and quick toasts move fast, so have everything ready to go.
Make the lemon-chive ricotta (3 minutes): In a small bowl, stir together 4 tbsp (≈60 g) whole-milk ricotta, 1 tsp fresh lemon zest, 1 tsp fresh lemon juice, and 1 tbsp of the finely chopped chives.
