A bright, indulgent Italian-inspired brunch: creamy lemon-kissed avocado spread on crisp ciabatta, layered with juicy tomato and milky fresh mozzarella, finished with a silky poached egg, fragrant basil and tangy-sweet balsamic reduction. Textures play together — crunchy toast, silky yolk, creamy avocado — while bright citrus and herb notes keep the dish lively.
Prep mise en place: slice the bread (if not pre-sliced), thinly slice the tomatoes and mozzarella, pick and lightly tear the basil leaves, halve and scoop the avocado into a bowl, and have your eggs on hand in a small cup each (this makes gentle egg transfer easier). Good mise en place shortens cook time and prevents overcooking the eggs.
Make the avocado spread: mash the avocado with a fork until mostly smooth but still slightly chunky; fold in 1 tsp lemon juice and 1/4 tsp sea salt. The lemon juice brightens flavor and slows oxidation; leaving a touch of texture makes the toast more interesting than a completely puréed spread.
Toast the bread: heat a large skillet or grill pan over medium-high heat. Brush both sides of each slice with a thin film of olive oil (about 1/2 tbsp oil per serving total; for two servings use 1 tbsp). Toast 1–2 minutes per side until golden and crisp. The whirlpool helps the white wrap neatly around the yolk, giving a tidy poached egg. Poach large eggs 3 minutes for a runny yolk, 3 1/2–4 minutes for slightly set yolks. Assemble the toasts: Spread a generous layer of the mashed avocado on each slice of toast (this creates a barrier so tomatoes don’t sog the bread).
