  • 1 slice whole-grain bread
  • 1/2 item ripe avocado
  • 1 large egg
  • 8 items cherry tomatoes
  • 1/4 tsp salt
  • to taste cracked black pepper
  • 1 tsp olive oil
  • 1 tsp vinegar

Begin by bringing a small saucepan of water to a gentle simmer over medium heat. Add 1 tsp of vinegar to help the egg white coagulate.

Toast the slice of whole-grain bread until golden brown. Set aside.

Halve and pit the ripe avocado. Scoop out the flesh and mash it in a small bowl using a fork. Add 1/4 tsp salt and cracked black pepper to taste. Mix well.

Slice the cherry tomatoes in half and drizzle with 1 tsp of olive oil.

Once the water is at a gentle simmer, crack the egg into a small cup. Creating a gentle whirlpool, slowly slide the egg into the water. Poach for 3-4 minutes until the white is fully set and the yolk is still runny. Remove with a slotted spoon and drain briefly on kitchen paper.

Spread the mashed avocado evenly over the toasted bread.

Place the poached egg gently on top of the avocado spread. Season with a pinch of additional salt and cracked black pepper.
