Mediterranean Chicken Kebabs with Tabbouleh & Yogurt Tzatziki

Ingredients

  • 150-180 g Chicken breast pieces marinated
  • 1 whole Bell pepper
  • 1 whole Onion
  • 4 pieces Skewers
  • 1 cup Bulgur
  • 1 bunch Parsley
  • 1 large Tomato
  • 1/2 bunch Mint leaves
  • 1 whole Lemon
  • 3 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 cup Greek yogurt
  • 1/2 whole Cucumber
  • 1 clove Garlic

Instructions

Preheat your grill or oven to 375°F (190°C). If using wooden skewers, soak them in water for about 10 minutes to prevent burning.

Thread the marinated chicken pieces, bell pepper slices, and onion chunks alternately onto the skewers.

Place the skewers on the grill or in the oven, and cook for 20-25 minutes, turning occasionally, until the chicken is cooked through.

Meanwhile, prepare the tabbouleh by soaking the bulgur in boiling water as per package instructions, then drain any excess water.

Finely chop the parsley, tomato, and mint leaves. Combine these with the soaked bulgur in a large bowl.

Squeeze the juice of one lemon into the bulgur mixture, and add olive oil, salt, and black pepper. Mix well and set aside to let the flavors meld.

For the yogurt tzatziki, grate the cucumber and squeeze out any excess water.

Mix the grated cucumber with Greek yogurt and minced garlic. Season with a bit of salt, then stir well to combine.

Once the chicken kebabs are fully cooked, serve them hot with a side of tabbouleh and a dollop of yogurt tzatziki.
