Ingredients

  • 6 oz salmon fillet
  • 1 cup cooked brown rice
  • 1 cup steamed broccoli
  • 1 tbsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp sesame seeds
  • 1 stalk spring onion
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Place the salmon fillet on the prepared baking sheet. Brush the fillet with 1/2 tablespoon of sesame oil, then drizzle with soy sauce. Season with salt and black pepper.

Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky. Remove from the oven and let it rest for a minute.

While the salmon is baking, reheat the cooked brown rice as needed.

In a small pan, heat the remaining 1/2 tablespoon of sesame oil over medium heat. Add the steamed broccoli to the pan, sauté for 2-3 minutes just to heat through and slightly season with a pinch of salt.

Slice the spring onion thinly.

Assemble the bowl: Place the brown rice at the base of a serving bowl, add the sautéed broccoli on one side and place the baked salmon on the other side.

Garnish the bowl with sliced spring onion and sprinkle sesame seeds over the top. Drizzle any remaining sauce from the baking tray over the bowl for extra flavor.
