  • 150 g salmon fillet
  • 1/2 cup cooked brown rice
  • 1 cup broccoli florets
  • 1.5 tbsp low-sodium teriyaki sauce
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 1 sliced spring onion

Preheat your oven to 200°C (400°F).

Place the salmon fillet on a baking tray lined with parchment paper. Brush the fillet with 1 tablespoon of the low-sodium teriyaki sauce, making sure it's evenly coated.

Bake the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork. The internal temperature should reach 63°C (145°F).

While the salmon is baking, steam the broccoli florets. You can do this by placing them in a steaming basket over boiling water for about 5-7 minutes, or until they're tender but still bright green.

Warm the cooked brown rice in a pan or microwave. If using a pan, drizzle a bit of water on it and cover to prevent drying out.

Once the salmon is baked, remove it from the oven and let it rest for a minute. Drizzle the remaining 0.5 tablespoon of teriyaki sauce over the top.

To assemble the bowl, place the warm brown rice at the bottom, then add the steamed broccoli alongside.

Top the bowl with the baked salmon fillet.

Drizzle the sesame oil over the entire bowl and sprinkle sesame seeds on top.

Garnish with sliced spring onion and serve immediately.
