In a large bowl, combine the ground lamb, grated onion, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well until all ingredients are well incorporated.
Divide the lamb mixture into 8 equal portions and shape each into a small sausage-like form around a skewer (if not using skewers, simply form into patties).
Preheat a grill or grill pan over medium-high heat and lightly oil the grate. Grill the lamb koftas, turning occasionally, until they are cooked through and have a nice char, about 10-12 minutes.
While the koftas are cooking, prepare the salad by tossing the mixed salad greens, diced cucumber, chopped tomatoes, and thinly sliced red onion in a large bowl.
In a small bowl, combine the tahini, lemon juice, olive oil, and a pinch of salt and pepper. Add water, a tablespoon at a time, until the dressing reaches a smooth, pourable consistency.
Once the koftas are done, place them over the salad and drizzle with the tahini-lemon dressing. Garnish with fresh mint and parsley.
Serve immediately while the lamb koftas are warm.
