In a medium saucepan over medium-high heat, bring 2 cups of almond milk to a gentle boil. Add a pinch of salt.
Stir in 1 cup of steel-cut oats. Reduce the heat to low and let it simmer uncovered, stirring occasionally, for about 25-30 minutes, until the oats are tender and most of the liquid is absorbed.
While the oats are cooking, dice the apples into small pieces. You can peel them if desired, but leaving the skin on provides extra fiber and color.
Add the diced apples, 1/2 tsp of cinnamon, and 1 tsp of vanilla extract to the oatmeal. Stir to combine and let it cook for an additional 5 minutes or until the apples soften slightly.
Roughly chop 30 g of walnuts and toast them lightly in a dry skillet over medium heat for about 2-3 minutes, until fragrant.
Once the oatmeal is done, remove it from heat and stir in 2 tbsp of maple syrup (optional) for sweetness. Adjust according to your taste preference.
Serve the oatmeal in bowls, topped with the toasted walnuts. Optionally, you can drizzle a little extra maple syrup or sprinkle extra cinnamon on top.
