In a medium saucepan, bring 240 ml of water to a boil. Add a pinch of salt to the water.
Add the 50 g of steel-cut oats to the boiling water. Reduce heat to low and allow the oats to simmer gently, uncovered, for about 15 minutes, stirring occasionally until the oats have absorbed most of the water and have become tender.
While the oats are cooking, peel the banana and slice it into thin rounds. Roughly chop the walnuts.
Once the oats are cooked to your desired consistency, remove from heat. Stir in 1/8 tsp of cinnamon.
Serve the oats in a bowl. Top with sliced banana, chopped walnuts, and drizzle with 1 tsp of maple syrup.
