In a medium saucepan, bring 3 cups of almond milk or dairy milk to a gentle boil over medium heat. Add a pinch of salt to enhance the flavors.
Stir in 1 cup of steel-cut oats and reduce the heat to medium-low. Let it simmer, stirring occasionally, for about 20 minutes or until the oats are tender and creamy.
Meanwhile, core and chop the apple into small cubes. Add the apple cubes to the oats along with 1 teaspoon of cinnamon. Stir well to combine.
Continue to simmer for another 5 minutes until the apples are tender and the mixture thickens to your desired consistency.
While the oats are cooking, roughly chop the walnuts. You can toast them in a small skillet over medium heat for 3-4 minutes for extra flavor, stirring frequently to prevent burning.
Once the oats are ready, stir in 2 tablespoons of maple syrup, adjusting to taste, if using.
Serve the oats warm in bowls, topped with toasted walnuts and a sprinkle of additional cinnamon, if desired.
