Preheat your oven to 350°F (175°C) and lightly grease a small baking dish.
In a medium bowl, combine the rolled oats, diced apple, chopped pecans, chia seeds, ground cinnamon, and salt. Stir well to ensure the ingredients are evenly mixed.
In a small saucepan, heat the 2% milk and maple syrup over medium heat until warm but not boiling. Pour the milk mixture over the oat mixture and stir to combine.
Transfer the mixture to the prepared baking dish and spread it out evenly. Bake for 25-30 minutes, or until the top is golden brown and the oats are cooked through.
Remove from the oven and let cool slightly before serving.
Serve with a dollop of plain Greek yogurt on top and enjoy warm.
