Toast the whole-grain bread slice to your desired level of crispiness.
Halve the avocado, and remove the seed. Scoop out the flesh of one half and mash it in a small bowl with a fork. Season with a pinch of salt and pepper, and mix well.
Bring a small pot of water to a gentle simmer. Add a pinch of salt and a splash of white vinegar (optional) to the water. Crack the egg into a ramekin or small bowl.
Create a gentle whirlpool in the simmering water using a spoon and carefully slide the egg into the center. Cook for about 3-4 minutes for a soft poached egg. Remove with a slotted spoon and drain on paper towels.
Spread the mashed avocado evenly over the toasted bread. Sprinkle with a small pinch of red pepper flakes if desired.
Place the poached egg on top of the avocado-covered toast. Season the egg with a pinch of salt and pepper.
Drizzle 1 teaspoon of olive oil over the toast for added flavor.
Serve with cherry tomatoes or sliced radish on the side for a refreshing touch.
