In a mixing bowl, combine 1/2 cup of chia seeds with 2 cups of almond milk and 1 teaspoon of vanilla extract. Mix well using a whisk or spoon until the chia seeds are evenly distributed throughout the almond milk.

Allow the mixture to sit for about 5 minutes, then stir again to prevent the chia seeds from clumping together.

Cover the bowl with plastic wrap or transfer the mixture to a jar or container with a lid. Refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken the pudding.

After chilling, remove the pudding from the refrigerator. Stir well to achieve a smooth consistency. If it's too thick, you can add a little more almond milk to reach your desired texture.
