In a medium-sized bowl, combine 1/2 cup of chia seeds with 2 cups of almond milk. Stir well to ensure the seeds are evenly distributed.
Add Stevia or erythritol to taste, as well as a pinch of salt and vanilla extract if using. Stir again to incorporate all the ingredients.
Cover the bowl with plastic wrap or transfer the mixture into a sealable container and refrigerate for at least 2 hours, or until the chia seeds have absorbed the liquid and the pudding has thickened.
Once the pudding has set, give it a good stir to check the consistency. If it's too thick, add a little more almond milk and stir until you reach the desired consistency.
Rinse and gently pat dry the 100g of mixed berries. Divide the chia seed pudding into serving bowls or cups and top with the fresh mixed berries evenly distributed among the servings.
