Chia Seed Pudding with Mixed Berries & Almonds

By Sasha Gordanier

Total: 4 hours 10 minutes
DessertBreakfastSnackGluten-FreeVegan

Ingredients

  • 6 tbsp chia seeds
  • 1 1/2 cups unsweetened almond milk
  • 1 tbsp maple syrup or honey
  • 1/2 cup mixed berries (fresh or thawed)
  • 2 tbsp sliced almonds

Instructions

1

In a medium-sized mixing bowl, combine the chia seeds, unsweetened almond milk, and maple syrup or honey. Stir well to ensure all the chia seeds are immersed in the milk and the sweetener is evenly distributed.

2

Cover the bowl with a lid or plastic wrap and place it in the refrigerator. Let the mixture sit for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and form a pudding-like consistency.

3

Before serving, stir the chia pudding to break up any clumps and achieve a smooth texture.

4

Divide the chia seed pudding into 2 serving bowls or glasses.

5

Top each bowl with the mixed berries and sprinkle the sliced almonds over the top for a crunchy texture.

6

Serve immediately, or keep refrigerated until ready to enjoy.
