In a large mixing bowl, combine the chia seeds, unsweetened coconut milk, vanilla extract, and maple syrup. Stir well to ensure the chia seeds are evenly distributed.
Cover the bowl with a lid or plastic wrap and refrigerate overnight, or for at least 6 hours, to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
Once the pudding has set, give it a good stir to break up any clumps that may have formed. If desired, you can adjust the sweetness with more maple syrup to taste.
Divide the chia pudding into serving bowls or glasses.
Top each serving with a generous portion of mixed berries and a sprinkle of sliced almonds.
Serve immediately, or refrigerate until ready to eat. Enjoy your healthy and delicious chia pudding!
