Ingredients

  • 1 cup cheese
  • 4 medium peppers
  • 1 cup cooked rice
  • 1 medium potato
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

Preheat your oven to 375°F (190°C).

Cut the tops off the peppers and remove the seeds and membranes. Drizzle with 1 tablespoon of olive oil and a pinch of salt.

Peel the potato and cut it into small cubes. Boil until tender, about 10 minutes, then drain.

In a bowl, combine cooked rice, boiled potato cubes, 1/2 cup cheese, 1 tablespoon olive oil, salt, black pepper, garlic powder, and onion powder. Mix well.

Stuff each pepper with the rice mixture and place them upright in a baking dish.

Sprinkle the remaining 1/2 cup of cheese over the stuffed peppers.

Bake in the preheated oven for about 20 minutes, or until the cheese is melted and golden brown.

Remove from oven and let cool for a few minutes before serving. Enjoy your cheesy stuffed peppers!
