Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds. Lightly salt the inside and set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped onion and minced garlic, sauté until translucent.
Add the ground beef to the skillet, cook until browned. Remove the beef and set aside.
In the same skillet, add another tablespoon of olive oil. Cook the diced chicken breast until cooked through and no longer pink.
Return the beef to the skillet with the chicken. Stir in the tomato paste, cumin, chili powder, salt, and black pepper. Mix well and cook for another 3 minutes to combine the flavors.
Stir in half of the cheddar cheese into the meat mixture, allowing it to melt slightly.
Stuff each bell pepper with the beef and chicken mixture.
Place the stuffed peppers in a baking dish. Top each one with the remaining cheddar cheese.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
Remove from the oven and let cool slightly before serving. Enjoy your Cheesy Beef and Chicken Stuffed Peppers!
