Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic and sauté for about 3 minutes until fragrant.
Add the ground beef and cubed chicken to the skillet. Cook until the beef is browned and the chicken is cooked through, about 8-10 minutes.
Season the meat mixture with salt and black pepper. Stir well to combine.
Stir in half of the shredded cheddar cheese and mix well until melted and incorporated.
Stuff each bell pepper with the beef, chicken, and cheese mixture. Place the stuffed peppers upright in a baking dish.
Top the stuffed peppers with the remaining cheddar cheese.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and continue baking for an additional 10 minutes until the cheese on top is golden and bubbly.
Let the stuffed peppers cool slightly before serving. Enjoy!
