Ingredients

  • 1 cup white rice
  • 2 cups water
  • 2 medium onions
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Rinse the rice under cold water until the water runs clear.

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat.

Reduce the heat to low, cover, and let the rice simmer for 15-20 minutes, or until all the water is absorbed and the rice is tender.

While the rice is cooking, peel and thinly slice the onions.

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until golden brown and caramelized, about 10 minutes.

Add the cooked rice to the skillet with the onions. Stir in the soy sauce, salt, and black pepper. Mix well to combine all ingredients evenly.

Continue to cook for another 5 minutes, stirring occasionally, until the rice is heated through and has absorbed the flavors.

Serve the onion fried rice hot, garnished with additional chopped green onions if desired.
