Ingredients

  • 1 cup white rice
  • 1 medium bell pepper
  • 1 medium yellow onion
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • 2 large eggs
  • 2 stalks green onions
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

Cook 1 cup of white rice according to package instructions, then set aside to cool. This should take about 15 minutes.

Chop the medium bell pepper and yellow onion into small, even pieces. Mince 2 cloves of garlic.

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

Add the chopped onion and bell pepper to the skillet. Stir-fry for about 4-5 minutes until they are soft and slightly caramelized.

Add the minced garlic and continue to stir-fry for another minute until fragrant.

Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs with a spatula until they are fully cooked, then mix them with the vegetables.

Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry everything together for about 3 minutes.

Add 2 tablespoons of soy sauce, 1/4 teaspoon of salt, and a pinch of black pepper. Stir well to combine the flavors.

Chop 2 stalks of green onions and add them to the rice. Stir to combine, then remove from heat.

Taste and adjust seasoning if necessary. Serve hot.
