Ingredients

  • 2 medium, sliced peppers
  • 1 large, diced onion
  • 1.5 cups rice
  • 2 fillets fish
  • 3 tablespoons oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 teaspoons cajun seasoning
  • 3 cups water

Instructions

Rinse the rice under cold water to remove excess starch.

In a medium pot, heat 1 tablespoon of oil over medium heat. Add the diced onion and sliced peppers, sauté for 5 minutes until tender.

Add the rice to the pot and stir for 2 minutes to toast lightly with the vegetables.

Pour in 3 cups of water and add 0.5 teaspoon of salt. Bring to a boil, then lower the heat to a simmer. Cover the pot and cook for 15-18 minutes until rice is tender and water is absorbed.

While the rice is cooking, season the fish fillets with 1 teaspoon of Cajun seasoning, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper.

In a large skillet, heat the remaining 2 tablespoons of oil over medium-high heat. Cook the fish fillets for about 4-5 minutes per side or until golden brown and cooked through.

Once the rice is done, fluff with a fork and serve on plates. Top with the cooked fish fillets and sprinkle with the remaining Cajun seasoning. Adjust seasoning to taste if necessary.
