Start by preparing the ingredients. Mince the garlic and peel and grate the ginger.
In a small bowl, combine the soy sauce, garlic, ginger, cornstarch, salt, and pepper. Mix well to create the stir-fry sauce.
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the beef strips and cook for 3-4 minutes until browned. Remove the beef from the pan and set aside.
In the same pan, add the remaining tablespoon of oil and the mixed vegetables. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
Return the beef to the pan with the vegetables. Pour the stir-fry sauce over the beef and vegetables. Stir well to coat everything evenly and cook for an additional 2 minutes.
Serve the beef stir-fry hot over the cooked rice. Enjoy your meal!
