Prepare all ingredients: mince the garlic and grate the ginger. Mix the soy sauce, minced garlic, and grated ginger in a bowl to create the marinade.
Add the beef strips to the marinade and let it sit for at least 10 minutes to absorb the flavors.
Heat 1 tablespoon of sesame oil in a large pan or wok over medium-high heat. Once hot, add the beef strips (without the marinade initially) and stir-fry them for about 3-4 minutes, or until browned and cooked through. Remove the beef from the pan and set aside.
In the same pan, add the remaining tablespoon of sesame oil. Add the mixed vegetables (broccoli, carrots, bell peppers) to the pan. Stir-fry for about 5 minutes or until the vegetables are tender-crisp.
Return the beef to the pan along with the reserved marinade. Stir everything together and let it cook for another 2-3 minutes to combine the flavors and ensure everything is heated through.
Season with salt and pepper to taste. Stir well to incorporate the seasoning.
Remove from heat and serve the beef stir-fry hot, preferably over steamed rice or noodles if desired.
