Warm Farro Bowl with Roasted Brussels Sprouts, Cranberries & Pistachios

Ingredients

  • 3/4 cup farro
  • 2 cup Brussels sprouts
  • 1/4 cup dried cranberries
  • 2 tbsp pistachios
  • 1.5 tbsp lemon-tahini dressing
  • 2 tbsp olive oil
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Preheat your oven to 400°F (200°C). If your Brussels sprouts aren't already roasted, toss them in 1 tablespoon of olive oil, a pinch of salt, and pepper. Spread them on a baking sheet and roast for 20 minutes, stirring halfway through, until they're golden and tender.

While your Brussels sprouts are roasting, warm the cooked farro over low heat in a saucepan. If you prefer, you can add a splash of water or broth to prevent it from sticking, stirring occasionally until heated through.

In a large mixing bowl, combine the warm farro, roasted Brussels sprouts, dried cranberries, and chopped pistachios. Drizzle the lemon-tahini dressing over the mixture.

Gently toss all the ingredients together until well combined and the dressing evenly coats the farro and Brussels sprouts. Taste and add additional salt and pepper if needed.

Transfer the mixture to serving bowls. If desired, garnish with a few extra chopped pistachios and a drizzle of olive oil.
