Ingredients

  • 2 fillets salmon fillets
  • 1 bunch asparagus
  • 2 tablespoons olive oil
  • 1 lemon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with a bit of olive oil.

Wash the asparagus and trim off the tough ends. Arrange the asparagus in a single layer on one side of the baking sheet.

Brush one tablespoon of olive oil over the asparagus. Season with half of the salt and pepper.

Place the salmon fillets on the other side of the baking sheet, skin-side down. Drizzle the remaining olive oil over the fillets.

Pour the freshly squeezed lemon juice over the salmon. Season the fillets with the remaining salt and pepper.

Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.

Remove from the oven and let it rest for a couple of minutes before serving. Serve the salmon fillets alongside the asparagus on plates, and enjoy!
