Ingredients

  • 5 oz pork tenderloin
  • 1 unit medium sweet potato
  • 1 tbsp butter or olive oil
  • 1 cup green beans
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

Preheat the oven to 400°F (200°C).

Season the pork tenderloin with half of the salt and pepper. Rub a small amount of olive oil over the tenderloin to lightly coat it.

Place the pork tenderloin on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).

While the pork is roasting, peel and chop the sweet potato into cubes. Boil in a pot of salted water for 15-20 minutes until tender.

Drain the sweet potatoes and mash with 1 tbsp of butter or olive oil until smooth. Season with a pinch of salt and pepper.

In a skillet over medium heat, add 1 tbsp olive oil. Once hot, add the green beans and a pinch of salt and pepper. Sauté the green beans for about 5-6 minutes, stirring occasionally, until tender and bright green.

Once the pork is done, let it rest for 5 minutes before slicing it into medallions.

Serve the sliced pork with the sweet potato mash and sautéed green beans on the side. Enjoy your meal!
