Ingredients

  • 400 g Pork tenderloin
  • 400 g Sweet potatoes
  • 150 g Green beans
  • 1 tbsp Olive oil
  • 1 tsp Fresh rosemary
  • 3 units Garlic cloves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Butter
  • 60 ml Milk

Instructions

Preheat your oven to 200°C (400°F).

Peel and cube the sweet potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

While the sweet potatoes are cooking, trim any excess fat from the pork tenderloin. Mince the garlic cloves.

In a small bowl, mix the minced garlic, rosemary, salt, and pepper. Rub the mixture over the entire pork tenderloin.

Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until golden brown, about 3-4 minutes per side.

Transfer the skillet into the preheated oven and roast the pork tenderloin for about 15-20 minutes, or until the internal temperature reaches 63°C (145°F).

While the pork is roasting, trim the ends of the green beans and steam them for about 5-7 minutes, until bright green and tender-crisp.

Once the sweet potatoes are tender, drain them and return to the pot. Add butter and milk, then mash until smooth. Season with additional salt and pepper to taste.

Remove the pork tenderloin from the oven and let it rest for 5-10 minutes before slicing.

To serve, slice the pork tenderloin and plate with sweet potato mash and steamed green beans on the side.
