Preheat your oven to 200°C (390°F).
Season the pork tenderloin with salt, pepper, and herbs. Set aside to marinate while preparing the vegetables.
Peel and chop the sweet potatoes into chunks. Place them in a pot of boiling salted water and cook until tender (about 15-20 minutes).
Trim the ends of the green beans and place them in a steamer or a pot of boiling water for about 5-7 minutes until tender-crisp.
Heat a skillet over medium-high heat and add olive oil. Sear the pork tenderloin on all sides until browned (about 2-3 minutes per side).
Transfer the pork tenderloin to an oven-safe dish and roast in the preheated oven for 15-20 minutes until it reaches an internal temperature of 145°F (63°C).
Once the sweet potatoes are tender, drain the water and add butter and milk. Mash until smooth and creamy. Season with additional salt and pepper to taste.
Remove the pork from the oven and let it rest for a few minutes before slicing it into medallions.
Serve the pork medallions with the sweet potato mash and steamed green beans on the side.
