Preheat the oven to 200°C (400°F).
Peel and dice the sweet potatoes into large chunks. Place them in a pot of boiling water and cook until tender, about 15 minutes.
While the sweet potatoes are cooking, prepare the salmon. Season the salmon fillets with salt and black pepper on both sides.
Place the salmon fillets on a baking sheet and drizzle with 1 tablespoon of olive oil or melted butter. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and flaky.
Trim the green beans and mince the garlic.
In a pan over medium heat, add 1 tablespoon of olive oil or butter. Add the minced garlic and cook for about 1 minute until fragrant.
Add the green beans to the pan, season with a pinch of salt and pepper, and sauté for 5-7 minutes, or until tender-crisp.
Once the sweet potatoes are cooked, drain and return them to the pot. Add 1 tablespoon of butter or olive oil, a pinch of salt, and mash until smooth and creamy.
Serve the baked salmon with the sweet potato mash and sautéed green beans. Add a side salad to complete the meal.
