Preheat your oven to 400°F (200°C).
Peel and chop the sweet potato into small chunks.
Place the sweet potato in a pot of salted water, bring to a boil, and simmer for 15-20 minutes until tender.
While the sweet potato is cooking, place the salmon fillet on a baking sheet lined with parchment paper. Season with salt and pepper.
Bake the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork.
Trim the ends of the green beans and mince the garlic cloves.
In a skillet over medium heat, melt 1 tbsp of butter or heat 1 tbsp of olive oil. Add the minced garlic and sauté for about 30 seconds.
Add the green beans to the skillet, season with salt and pepper, and sauté until they are tender-crisp, about 5-7 minutes.
Once the sweet potatoes are tender, drain the water and return them to the pot. Add 1 tbsp of butter or olive oil, and mash until smooth. Season with salt and pepper to taste.
Serve the baked salmon with the sweet potato mash and sautéed green beans, along with a side salad.
