Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
Season salmon fillets with salt, black pepper, and a squeeze of lemon juice. Place the salmon fillets on the prepared baking sheet.
Bake the salmon in the preheated oven for 15-18 minutes or until it flakes easily with a fork.
Meanwhile, peel and cut the sweet potato into chunks. Place in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes.
Drain the sweet potatoes and return them to the pot. Add 1 tbsp of butter, salt, and pepper to taste. Mash until smooth and creamy.
In a pan, heat 1 tbsp of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add green beans and continue to sauté for 5-7 minutes until tender-crisp.
Season the green beans with a pinch of salt and pepper, and squeeze some lemon juice on them before serving.
Prepare the side salad by combining mixed greens, sliced tomato, and cucumber in a bowl. Dress with a squeeze of lemon juice, a drizzle of olive oil, salt, and pepper.
Serve the baked salmon with sweet potato mash, sautéed green beans, and the side salad.
