Baked Salmon with Sweet Potato Mash & Sautéed Green Beans

Ingredients

  • 170 g Salmon fillet
  • 1 medium Sweet potato
  • 150 g Green beans
  • 2 cloves Garlic
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • to taste NA Salt
  • to taste NA Black pepper
  • 1 tbsp Lemon juice
  • 1 serving Side salad (premade)

Instructions

Preheat your oven to 200°C (400°F).

Place the salmon fillet on a baking tray lined with parchment paper. Drizzle with 1 tablespoon of olive oil and lemon juice. Season with salt and black pepper.

Bake the salmon in the preheated oven for 15-20 minutes, or until cooked through and flakes easily with a fork.

While the salmon is baking, peel and cube the sweet potato.

Place the sweet potato cubes in a pot of salted boiling water and cook for 15 minutes, or until tender.

Drain the sweet potatoes and return them to the pot. Add 1 tablespoon of butter, salt, and black pepper to taste. Mash until smooth and creamy. Set aside and keep warm.

Trim the ends of the green beans and steam them in a saucepan with a little water for 5 minutes until tender-crisp.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add the steamed green beans to the skillet and sauté for another 2-3 minutes. Season with salt and black pepper to taste.

Serve the baked salmon with sweet potato mash and sautéed green beans alongside a refreshing pre-made side salad.
