  • 3 large Eggs
  • 3 tablespoons Soy sauce
  • 2 tablespoons Butter
  • 2 cups Rice
  • 1 medium Cucumber
  • 2 stalks Celery
  • 1 medium Bell pepper
  • 1/4 cup Parsley

Instructions

Cook the rice according to package instructions. Once cooked, let it cool and set aside.

Dice the cucumber, celery, and bell pepper into small uniform pieces.

In a large skillet or wok, heat 1 tablespoon of butter over medium heat. Add the diced celery and bell pepper, and sauté for about 3-4 minutes until they begin to soften.

Add the cooked rice to the skillet, stirring well to combine with the vegetables. Cook for an additional 3-4 minutes to heat through.

Push the rice and vegetables to one side of the skillet. In the empty space, add the remaining tablespoon of butter and crack the eggs directly into the skillet.

Scramble the eggs until fully cooked, then mix with the rice and vegetables. Pour the soy sauce over the mixture, stirring well to coat everything evenly.

Finely chop the parsley and sprinkle it over the fried rice. Then, add in the diced cucumber and gently mix.

Serve the vegetable and egg fried rice hot, garnished with additional parsley if desired.
