Heat the oil in a large frying pan or wok over medium-high heat.
Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are tender-crisp.
Push the vegetables to one side of the pan. Crack the egg into the empty side and scramble it using a spatula. Cook until the egg is fully set.
Add the cooked rice to the pan and mix everything together with the vegetables and scrambled egg.
Pour the soy sauce over the rice mixture and stir well to ensure even distribution. Season with salt and pepper to taste.
Fry everything together for another 2-3 minutes, stirring occasionally, until the rice is hot and slightly crispy.
Serve the vegetable fried rice hot. Enjoy!
