Ingredients

  • 120 g lean beef strips (sirloin or flank)
  • 75 g soba noodles (buckwheat)
  • 1 cup mixed stir-fry vegetables (bell pepper, snap peas, carrot, onion)
  • 1 tbsp vegetable oil
  • 2 tbsp low-sodium soy sauce
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 1 tbsp sliced green onions
  • 1 tsp sesame seeds

Instructions

Cook the soba noodles according to the package instructions. Drain and set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.

Add the beef strips to the skillet and stir-fry for about 3-4 minutes, or until browned and cooked through.

Add the mixed stir-fry vegetables to the skillet with the beef and continue stir-frying for 3-4 minutes until the vegetables are just tender.

Stir in the cooked soba noodles, soy sauce, and sesame oil. Toss everything together until well combined and heated through.

Serve the stir-fry hot, garnished with sliced green onions and sesame seeds.
