Heat the olive oil in a large skillet over medium heat.
Add the finely chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent and the garlic fragrant, about 2-3 minutes.
Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
Season the beef with salt, black pepper, and crushed red pepper flakes. Stir to combine all the ingredients evenly.
Once the beef is cooked through, reduce the heat to low and sprinkle the grated cheddar cheese evenly over the top.
Cover the skillet with a lid and allow the cheese to melt over the beef, about 3-5 minutes.
Serve hot, optionally garnished with chopped parsley or scallions for added color and flavor.
