Preheat your oven to 375°F (190°C).
In a bowl, mix the ground beef, 50g of grated cheddar cheese, finely chopped garlic from 2 cloves, and a beaten egg. Season with salt and pepper.
Slice the tops off the tomatoes and scoop out the insides. Stuff each tomato with the beef mixture and top with a little more grated cheese.
Place the stuffed tomatoes in a baking dish, drizzle with 1 tablespoon of olive oil, and set aside.
Heat the remaining olive oil in a pan over medium heat. Season the pork loin with salt, pepper, chopped garlic from 2 cloves, and fresh herbs. Sear on all sides until golden brown, about 10 minutes.
Transfer the pork loin to a separate baking dish and place both the pork and the stuffed tomatoes in the oven.
Bake for 25-30 minutes until the pork is cooked through and the tomatoes are bubbling and slightly browned on top.
Remove both from the oven. Let the pork loin rest for 5 minutes before slicing. Serve the sliced pork with a side of cheesy beef-stuffed tomatoes.
