Preheat your oven to 375°F (190°C).
Mince the 4 cloves of garlic and chop the 2 medium tomatoes into small cubes.
In a pan, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Add 1 lb of ground beef to the pan. Season with 1/2 tsp of salt and 1/2 tsp of black pepper. Cook until browned, about 5-7 minutes.
Once the beef is cooked, add the chopped tomatoes and cook for another 3-4 minutes. Remove from heat and let it cool slightly.
Cut the 2 lbs pork loin along the side to create a butterfly cut, opening it flat. Be careful not to cut all the way through.
Spread the cooled beef mixture evenly over the inside of the pork loin. Sprinkle 1 cup of cheese on top of the beef.
Roll up the pork loin and tie it with kitchen twine every 1-2 inches to secure the filling inside.
Rub the outside of the pork loin with 1 tbsp of olive oil and season with the remaining 1/2 tsp of salt and black pepper.
Place the stuffed pork loin in a roasting pan and bake in the preheated oven for 40-45 minutes, or until the internal temperature reaches 145°F (63°C).
Once done, remove from the oven and let it rest for at least 10 minutes. Garnish with 2 tbsp of chopped fresh parsley.
Slice and serve warm. Enjoy your low-carb stuffed pork loin with beef and cheese!
