Ingredients

  • 5 oz salmon fillet
  • 1 cup asparagus
  • 1 small baby potato
  • 1 tbsp olive oil
  • 1 small lemon
  • 2 cloves garlic
  • to taste n/a salt
  • to taste n/a black pepper

Instructions

Preheat the oven to 400°F (200°C).

Wash and trim the asparagus. Set aside.

Slice the baby potato into thin rounds, approximately 1/4 inch thick.

Mince the garlic cloves.

In a small bowl, mix the minced garlic, olive oil, juice from half the lemon, salt, and pepper to create a marinade.

Place the salmon fillet on a baking sheet lined with foil. Brush the salmon with half of the marinade. Squeeze a little lemon juice on top if desired.

Arrange the asparagus and sliced potatoes around the salmon on the baking sheet. Drizzle or brush them with the remaining marinade.

Bake in the preheated oven for about 18-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The potatoes should be tender and the asparagus slightly crispy.

Once cooked, remove from the oven. Plate the salmon along with the roasted asparagus and potatoes.

Garnish with lemon slices and a sprinkle of fresh ground pepper. Serve immediately.
