In a large mixing bowl, combine the cooked farro and drained canned tuna. Gently flake the tuna into smaller pieces.
Slice the cherry tomatoes in half and the cucumber into quarters. Finely chop the red onion and roughly chop the Kalamata olives.
Add the cherry tomatoes, cucumber, red onion, and Kalamata olives to the mixing bowl with the farro and tuna.
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
Pour the dressing over the salad ingredients in the mixing bowl and toss gently to combine all the flavors.
Chop the parsley finely and add it to the salad, tossing once more to distribute evenly.
If using, crumble the feta cheese over the top of the salad before serving.
Serve the Mediterranean Farro Salad chilled or at room temperature, and enjoy!
