Boil the whole wheat pasta in a large pot of salted water according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
While the pasta is cooking, prepare the vegetables: peel and dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and roughly chop the parsley.
In a large mixing bowl, combine the drained tuna, cucumber, cherry tomatoes, kalamata olives, red onion, and cooled pasta.
In a small bowl, whisk together the olive oil, juice of one lemon, salt, and pepper to taste, creating the dressing.
Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
Garnish the salad with chopped parsley and serve chilled or at room temperature. Adjust seasoning with more salt and lemon juice if needed.
