Rinse the farro under cold water, then combine it with 2 cups of water in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to low and simmer, covered, for about 20-25 minutes or until the farro is tender and the water is absorbed. Drain any excess water if needed.
While the farro is cooking, drain and rinse the canned chickpeas under cold water. Set aside.
Peel and roughly chop the cucumber into small cubes. Do the same with the half of the red onion, chopping it finely.
In a large mixing bowl, combine the cooked farro, chickpeas, cucumber, and red onion.
Drizzle the mixture with 2 tablespoons of olive oil, and season with salt and black pepper to taste. Stir well to ensure everything is evenly coated.
Let the mixture sit for at least 5 minutes before serving, allowing the flavors to meld. Adjust the seasoning if needed.
