A vibrant Mediterranean grain bowl that pairs chewy nutty farro with caramelized roasted eggplant, blistered cherry tomatoes, briny olives, cool cucumber and creamy feta — all brightened by a lemony olive oil drizzle and dollops of garlicky tzatziki.
