In a mixing bowl, combine the yogurt and tikka masala paste. Add salt to taste.
Add the chicken chunks to the yogurt mixture, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
While the chicken is marinating, cook the brown rice. In a medium pot, add the brown rice and 2 cups of water. Bring to a boil, then reduce heat to a simmer, cover, and cook for about 40 minutes or until rice is tender and water is absorbed. Stir in the frozen peas after 35 minutes of cooking.
Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced onion and sauté for about 5 minutes or until softened and translucent.
Add the marinated chicken, including the yogurt mixture, to the skillet with the onions. Cook for 10-12 minutes, stirring occasionally, until the chicken is cooked through and has a nice golden color.
Once the chicken is cooked, serve it over the brown rice mixed with peas.
Garnish with fresh herbs if desired and enjoy your Spiced Chicken Tikka with Brown Rice!
